PCB's escape key works the way you expect it to work. For gschem, what I've learned to do is just ignore the net that's following my cursor around, and just hit 'n' to start a new net (and discard the one it was trying to create). Double clicking works too, but it always seems to me like the double click interval is different than other applications.
